The Truth About Cutting Boards

It's the holiday season once again! And, as any good guest or host knows, every dish is a big deal. This time of year, you are likely to be spending countless hours in your kitchen preparing your family's favorites or your much requested secret recipe to bring to holiday parties. But, in the midst of your holiday frenzy, don't forget that a chef is only as good as his or her tools. Here are five quick tips to getting the best cutting board for your food prep and keeping your board at top performance:

1) Bigger is better - Though a small board might be tempting, you'll never regret having that extra space when your cutting and chopping. Once you have that extra space, you'll wonder how you ever did without it.

2) Bamboo above all - Bamboo cutting boards are a favorite right now for all the right reasons. Bamboo is lightweight, attractive, and reasonably priced. They're also a sanitary choice over other wood products.

3) Keep it clean and get two - Two boards give you the option of using one for veggies and the other for meat. That is more sanitary and helps you avoid cross-contamination.

4) Skip the rubber edges and cleats - Take a tip from professional chefs and lay a damp paper towel under the board and slippage is gone.

5) Take care of your board - Proper maintenance means a long lasting, reliable surface to prep your food. Wash in soapy water and dry immediately, don't soak. A little food grade mineral oil will keep your bamboo board looking and performing great for years to come. If you don't like food grade mineral oil, try beeswax, refractionated coconut oil, or Brazil wax (also known as Carnauba oil). You can also use a little lemon juice to remove odors. NEVER use bleach, olive oil, peanut oil, corn oil, alcohols, or cleaning solvents on your bamboo board.
